Barbecued Pork Sandwiches- Recipe
(I love making this, because we always have plenty left over and me and my toddler will eat the left overs for the next two days during lunch time)
Makes- around 25 sandwiches
Cost around $0.55 per sandwich (*depending on what spices you already have on hand)
1 boneless pork roast (I have used pork loin when on sale and taste just as good)
Dash of pepper
2 cups chicken broth (no name is fine)
½ cup sugar
½ cup cider vinegar
½ cup soy sauce (cheapest one always taste better)
3 teaspoons dried minced onion
4 teaspoons ground mustard
4 teaspoons paprika
25 sandwich rolls (hamburger buns, no name is cheaper)
Rub roast with pepper; place in a shallow roasting pan. Bake uncovered at 350 degrees for 1 ¼ hours. Meat thermometer should read 160 degrees.
Transfer roast to a Dutch oven. In a small bowl, combine broth, sugar, vinegar, soy sauce, onion, mustard and paprika. Pour over roast. Bring to a boil, reduce heat; cover and simmer for 1 ½ hours or until meat is very tender. (Cheaper cuts of meat may take a bit longer, but it will get tender)
Remove meat and let cool till you can handle it without getting burnt. Shred all your meat with two forks. (I always use my hands, it seems faster to me). Return to pan with the juices and heat again, till hot. Fill sandwich rolls and enjoy.
The next day, you can heat some up in the microwave and it taste just as good. If it seems a little dry the next day, sprinkle a small amount of water over top before heating, it will moisten right up.
